Pizza was born in Naples, Italy and is now eaten all around the world. Italian’s eat their pizza crust thin and with very few ingredients.
A few simple products synonymous with Italian cooking creates an amazing amount of flavour! My favourite pizza is Prosciutto & Rocket with boccocini cheese or buffalo mozzarella.
I have used a Spanish prosciutto – Jamon` – for this recipe as I love it’s sharp salty flavour! You can substitute with your favourite prosciutto. It’s important to dress the rocket leaves with sea salt, black pepper, extra virgin olive oil and balsamic vinegar. This along with the boccocini cheese helps to break through the saltiness of the prosciutto.

1 each Pizza Base coated with Pizza Base Sauce
6 slices Prosciutto, thinly sliced
3 pieces Boccocini Cheese or Buffalo mozzarella cheese, thinly sliced
500g Rocket leaves
5grs Extra Virgin Olive Oil
5grs Balsamic Vinegar
- Place slices of boccocini cheese or buffalo mozzarella cheese onto a prepared pizza base covered with pizza base sauce.
- Layer with thin slices of prosciutto.
- Place this in oven and cook for 10 mins or until the ingredients are cooked.
- Meanwhile toss rocket with Extra Virgin Olive oil, balsamic vinegar, sea salt and pepper. Sit the dressed rocket leaves in middle of cooked pizza. Yum – ready to eat.
