This is a traditional family recipe that has been passed down the generations! Mum cooked these all the time (and still does).
I remember when the fritters rarely made it to the dining table – Dad, my siblings and I would slip into the kitchen and pilfer the cooked fritters while Mum wasn’t looking.
So easy to make, flavoursome and takes no time at all! The essence to this recipe is in preparing the Zucchini. Mum would grate them, and then allow them to sit for a while in sea salt. After that she would squeeze out the excess moisture (water) which would otherwise mask the flavour and create a soggy fritter.
You can add more ingredients to this recipe if you like – corn kernels, grated carrot, avocado, or whatever you need the kiddies to eat more of!
