Banana Bread with Walnuts
Whenever I have 3 overripe bananas I make this quick and easy loaf that is so popular with the family.
Hubby will actually hint during breakfast, “I see 3 overripe bananas in the fruit bowl, Mumma!”. I mostly respond with “well you better eat them before they go completely off!” We laugh it off knowing that I’ll be making Banana & Walnut Bread ready for that afternoon.
I think what I love about most this recipe is how easy it is to make – a piece of cake! Takes absolutely no time to prepare and the only time needed is in the oven – requiring about 1 hr to bake.
The ingredients are staples in most pantry’s with the use of plain flour, sugar, cinnamon, eggs, oil, walnuts & of course, overripe bananas! Did I mention how moorish it is to eat? No? Well it is! You won’t be able to stop at one piece – Hubby doesn’t! Don’t tell him I told you, but I he has a record for sampling 2 & 1/2 slices of Banana & Walnut Bread in a row!
It’s perfect for breakfast, brunch, morning or afternoon tea (my 5 year old, Freya, is always ravenous when she gets home from Preschool and this is hits the spot all the time!).
If there are any nut allergies in your family, simply omit the walnuts for a nut-free loaf! However, if nuts are not an issue, I highly recommend you add them in; the crunchy nut texture alongside the moist mushy banana sponge is heaven. Furthermore, once the batter has been poured into your prepared tin, ensure you place thin slices of banana on top as well as a generous sprinkle of demerara sugar. This will create food for the eyes, and the crusty coating from the caramelised sugar adds another level of crunch.
